- 0.5 oz lemon juice
- 2.5 ounces chamomile tea concentrate (see note)
- 1.25 ounces raw honey (see note)
- Orange expression
Put all the ingredients in a saucepan, shake cold, serve over ice. Invert the peel around the jar to release the orange oil and reveal the orange peel on top. Garnish with orange leaves and spices.
Note: Chamomile tea concentrate is a 2:1 ratio of tea to water.
Spiced Honey Stir Mix equal parts honey and spices together. The spices used are sage, cardamom and black pepper.

- 1.5 oz J. Henry Bourbon
- 0.5 oz dram allspice (eg St. Elizabeth)
- 0.25 oz fresh lemon juice
- 0.5 oz cinnamon syrup (see below)
- 1 egg white
- 1/4 cup heavy cream
Whisk together all the ingredients except whipped cream. add ice. Shake again. Double filter in the glass.
Pour slowly over the rim of the glass and let the lightly whipped cream float on top.
Spiced cinnamon syrup
- 4 glasses of water
- 1/4 cup honey
- 3 cinnamon sticks
- 1 star fennel
- 3 pieces of fresh ginger
- 1 tablespoon of freshly grated nutmeg
Boil all the ingredients and cook until thick.

- 2 ounces homemade cranberry juice (see recipe)
- 1 ounce blood orange-rosemary syrup (see recipe)
- Mineral water
Strain into a rocks glass with crushed ice. Drizzle with soda water. Garnish with a can of blood orange zest and a sprig of rosemary.
Homemade cranberry juice
- 2 cups white cranberry juice
- 1 cup fresh cranberries
Bring the ingredients to the boil and simmer for 15 minutes. Blend until smooth.
Blood Orange Rosemary Syrup
- 3 glasses of water
- Peel 3 oranges
- 4 sprigs of fresh rosemary
- 1/4 cup brown sugar
Boil all the ingredients and cook until thick.

- 1.75 ounces of Tito's vodka
- 1.5 liters of cranberry juice
- 1.5 ounces of club soda
- 2 oz Barrett's Ginger Beer
- 0.5 oz lemon juice
Mix all the ingredients in a glass over ice. Give the gift of a straight pin mirror decorated with bass wood wedges.

- 16 ounces (2 cups) 5-year aged Barbadian rum (or other aged rum)
- 20 ounces (2.5 cups) cranberry syrup (see recipe below)
- 24 oz (3 cups) ginger tea (see below)
- 8 ounces (1 cup) fresh lemon juice
- 1 bottle of Francois Montand champagne (or other dry sparkling wine)
- Orange rings and fresh cranberries for garnish
Mix the ingredients and let it cool. Serve fresh oranges and cranberries over ice.

- 32 ounces (4 cups) ginger tea (see below)
- 20 ounces (2.5 cups) cranberry syrup (see recipe)
- 8 ounces (1 cup) lemon juice
- 32 ounces (4 cups) sparkling water
Mix the ingredients and let it cool. Serve with orange wedges and fresh cranberries over ice for garnish.

- 2 cinnamon sticks
- 2 oranges with orange peel
- 12-ounce bags fresh or frozen cranberries
- 20 ounces (2.5 cups) of water
- 16 ounces (2 cups) white sugar
- 4 ounces (1/2 cup) brown sugar
Mix the ingredients in the pan. Bring to the boil and then reduce the heat to a simmer. Stir every minute. Once the cranberries have popped open (their skins burst), leave in the container for another 10 minutes. Remove from the stove and leave to cool for 20 minutes. Then stress. (Frozen cranberries take longer to ripen.)

- 2 sachets or two tablespoons of good quality ginger tea, the only ingredient being dried ginger.
- 1 cup of warm water
Leave on for 15 minutes.

- 2 ounces bourbon hazelnut caramel (see note)
- 0.25 ounce of boiled syrup
- Kingdom Wormwood Bitters Cocktail 2 dashes
- 2 pieces of Angostura bitters
- Orange peel
Mix all the ingredients in a mixing glass. Stir until cool. Serve over "snowballs" (freshly crushed ice in 3 inch diameter balls). Serve in double Old Fashioned glasses and garnish with orange peel.
Note: To make caramel pecan bourbon, soak pecans in water for 24 hours to remove skin and excess salt. Drain the pecans and add them to Elijah Craig's Bourbon and infuse for at least 24 hours.
